1. What is lyophilisation?

Freeze-drying is a process that removes moisture from a product. The frozen water it contains evaporates under vacuum before it can become a liquid. This process leaves freeze-dried fruit, berries and vegetables light (weight reduction of about 10 times) and dry, with almost unchanged appearance, shape, volume, colour and biologically valuable substances, vitamins and enzymes.

Conventional heat drying is usually carried out at high temperatures to evaporate the moisture and preserve only the final content of the product. In freeze-drying, the product is first cooled, in particular at high temperatures, and then the moisture is removed, preserving the product’s structure and nutritional values. This allows the quality and nutritional value of the products to be maintained in a way that would not be possible with the conventional heat-drying method.
Up to 97% of nutrients are preserved by cold drying, 60% by conventional heat drying and 40% by jarring.

Our main objective – to allow you to enjoy a plant that grows in season for all 4 seasons. This means that when you buy our products, you will be eating products with practically the same nutritional value as they were at the time of harvest.
It is rare to find strawberries or blueberries grown in the forests of Dzūkija in the winter and Lithuanian strawberries in the spring. But we make it possible, because our freeze-dried raw materials are just that.

Freeze-dried products are said to last for many years when stored properly. Because they are free of moisture, they stop microbial growth and reduce the risk of oxidation and other types of chemical reactions.

Freeze-dried products must be stored in a completely sealed container. We recommend storing our unopened jars in a dry, cool (up to +25 degrees Celsius), dark place (sunlight may fade the product). If, after opening a fruit or berry jar, the contents are not consumed within 7 days, we recommend storing it in the fridge or freezer to keep the products crisp. Sometimes the freeze-dried powder may be a little soggy from standing, so we recommend mixing it with a spoon. This does not affect the quality of the product.

Use freeze-dried products wherever you would use fresh:
– If you drink tea or water with lemon, so you don’t have to cut up a fresh lemon – add a third of a teaspoon of freeze-dried lemon powder;
– If you are marinating meat for which you would have used freshly peeled garlic – don’t make it worse and use freeze-dried garlic powder or pieces;
– Have your breakfast with frozen berries or jams – choose a healthier alternative – freeze-dried berries, chunks or powder are much more nutritious.
– You like to take snacks with you – freeze-dried fruit or berries weigh only a few dozen grams and do not require quick consumption or special storage conditions.
– If you’re in a hurry and don’t always have time to eat, have a freeze-dried gluten-free smoothie with just water to satisfy your hunger.
– You like to cook and try new recipes – experiment: freeze-dried cranberry powder and caramelised pears or beetroot are a great combination, freeze-dried ginger powder is used in poultry stew, and freeze-dried pansy blossoms make a nice addition to everyday dishes.
